When your over doesn't work...you make Pineapple Upside-down Cake

  1. A while back I made cupcakes in my large roasting pan. I have been without a stove/oven for about 9 monthes. Not really worried about it...we a back up oven and always use the grill.

    But now it I am challenging myself by finding different ways to perpare a meal...

    I used a yellow cake mix, 3 eggs, 1/3 cup canola oil, the juice from pineapple and water to make 1 1/3 cup liquid, and mix. While I mixed 1cup packed brown sugar and a stick of butter is melting, in the roaster, in a sprayed cake pan. Wisk the butter/ sugar combo. Place pineapple on top of that and pour cake batter on top to bake in preheated roaster for 30 to 40 min.
